Delicious chicken meatballs enveloped in a sticky teriyaki sauce with fresh pineapple, providing a perfect balance of sweet and savory flavors.

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper, to taste
  • 1/2 cup teriyaki sauce
  • 1 cup pineapple chunks (fresh or canned)
  • Sesame seeds, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground chicken, breadcrumbs, green onions, egg, minced garlic, ginger, and a pinch of salt and pepper in a large bowl. Mix gently.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for 15-20 minutes until golden brown and cooked through.
  5. Heat the teriyaki sauce in a saucepan over medium heat. Add the pineapple chunks and cook until warmed through, about 5 minutes.
  6. Toss the cooked meatballs in the teriyaki sauce until well-coated.
  7. Serve hot, garnished with sesame seeds.

Notes

You can prepare the meat mixture ahead of time and refrigerate it for up to 24 hours. Customize the recipe by adding chili flakes for heat or using ground turkey or pork.
