A delightful Taco Rice Bowl featuring seasoned ground beef, fluffy rice, fresh vegetables, and creamy cheese, topped with cilantro.

  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn kernels
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Sizzle the beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
  2. Season to perfection: Stir in the taco seasoning, add a splash of water if needed, and heat through for a couple of minutes.
  3. Layer up: Start with a base of cooked rice in a bowl or plate.
  4. Create flavorful layers: Spoon the seasoned beef over the rice, followed by diced tomatoes, black beans, and corn.
