Creamy and cheesy enchiladas filled with tender shredded rotisserie chicken, perfect for family dinners or gatherings.

Ingredients

  • 2 cups Shredded Rotisserie Chicken
  • 2 cups White Sauce
  • 1 cup Monterey Jack Cheese, shredded
  • 8 Tortillas
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1/2 cup Sour Cream
  • 1/4 cup Fresh Cilantro, chopped
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté chopped onions and minced garlic in olive oil until golden.
  3. Combine shredded rotisserie chicken with the white sauce in the skillet.
  4. Fill each tortilla with the chicken mixture and roll them tightly.
  5. Top rolled tortillas with remaining white sauce and sprinkle cheese.
  6. Bake for 25-30 minutes until cheese is bubbly and golden.
  7. Garnish with fresh cilantro and serve warm.

Notes

Feel free to customize the filling with beans or different cheeses. Can be made ahead and refrigerated before baking.
