1 lb (450g) beef sirloin or flank steak
1 tablespoon vegetable oil
Salt and pepper, to taste
4 cups mixed lettuce leaves (such as Romaine, spinach, or arugula)
1 cucumber, thinly sliced
1 red bell pepper, thinly sliced
1⁄2 red onion, thinly sliced
1⁄4 cup fresh cilantro leaves
1⁄4 cup fresh mint leaves
1⁄4 cup chopped roasted peanuts (optional, for garnish)
1 small red chili (or more for spice), thinly sliced (optional)
For the dressing:
3 tablespoons fish sauce
2 tablespoons lime juice
1 tablespoon sugar
1 tablespoon rice vinegar
1 clove garlic, minced
1 small red chili, minced (optional)
1 teaspoon sesame oil
Instructions
Preheat a grill or skillet over medium-high heat.
Rub the beef with a little vegetable oil and season with salt and pepper.
Grill or sear the beef on both sides for about 4-5 minutes per side for medium-rare, or longer depending on your desired doneness.
Once cooked, remove the beef from the heat and let it rest for 5-10 minutes before slicing it thinly against the grain.
While the beef is resting, prepare the salad ingredients: in a large bowl, combine the lettuce, cucumber, bell pepper, red onion, cilantro, and mint.
In a small bowl, whisk together the fish sauce, lime juice, sugar, rice vinegar, garlic, chili (if using), and sesame oil until the sugar dissolves and the dressing is well combined.
Add the sliced beef to the salad and drizzle with the dressing. Toss to combine all the ingredients evenly.
Garnish with chopped peanuts and extra chili slices for heat, if desired.

Notes
Feel free to adjust the amount of chili for desired spice level.
