  • 1 can (20 oz) crushed pineapple, undrained
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded coconut (optional)
  • 1/2 cup crushed buttery crackers (like Ritz) for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together crushed pineapple, granulated sugar, brown sugar, melted butter, vanilla, eggs, and milk.
  3. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the mixture into the greased baking dish and sprinkle with crushed crackers and shredded coconut if using.
