8 oz cream cheese, softened
3 tablespoons granulated sugar
1 teaspoon lemon juice
½ teaspoon vanilla extract
1 sheet frozen puff pastry, thawed
1 egg (for egg wash)
1 tablespoon water
Extra granulated sugar (optional, for topping)
Instructions
In a medium bowl, mix the softened cream cheese with sugar, lemon juice, and vanilla extract. Beat until smooth and creamy.
Unfold the thawed puff pastry on a lightly floured surface. Roll it slightly to even it out. Cut into 8 rectangles (or squares, if preferred).
Place the pastry rectangles on a parchment-lined baking sheet. Spoon a generous tablespoon of the cream cheese mixture into the center of each. Fold or shape the edges if desired.
Whisk the egg with a tablespoon of water. Brush the edges of each pastry with the egg wash. Sprinkle with a pinch of sugar if desired.
Preheat your oven to 400°F (200°C). Bake the pastries for 15–18 minutes or until puffed and golden brown. Let cool slightly before serving.
Notes
These pastries are best enjoyed warm.
You can add fruit preserves on top for additional flavor.
