  • 8 oz cream cheese, softened
  • 3 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • ½ teaspoon vanilla extract
  • 1 sheet frozen puff pastry, thawed
  • 1 egg (for egg wash)
  • 1 tablespoon water
  • Extra granulated sugar (optional, for topping)

Instructions

  1. In a medium bowl, mix the softened cream cheese with sugar, lemon juice, and vanilla extract. Beat until smooth and creamy.
  2. Unfold the thawed puff pastry on a lightly floured surface. Roll it slightly to even it out. Cut into 8 rectangles (or squares, if preferred).
  3. Place the pastry rectangles on a parchment-lined baking sheet. Spoon a generous tablespoon of the cream cheese mixture into the center of each. Fold or shape the edges if desired.
  4. Whisk the egg with a tablespoon of water. Brush the edges of each pastry with the egg wash. Sprinkle with a pinch of sugar if desired.
  5. Preheat your oven to 400°F (200°C). Bake the pastries for 15–18 minutes or until puffed and golden brown. Let cool slightly before serving.
