  • 2 cups cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced zucchinis, halved cherry tomatoes, and red onion. Toss gently to mix the vegetables.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined.
