- 1 baguette
- 1 cup cooked turkey, shredded
- 1/2 cup pickled carrots
- 1/2 cup pickled daikon radish
- 1 cucumber, thinly sliced
- 1 jalapeño, thinly sliced
- 1/4 cup fresh cilantro leaves
- 1/4 cup mayonnaise
- 1 tablespoon sriracha sauce
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Start by preparing the pickled vegetables. In a bowl, combine the pickled carrots and daikon radish. Set aside to allow the flavors to meld.
- In a small bowl, mix the mayonnaise and sriracha sauce together until well combined. This will be your spicy mayo.
- Slice the baguette in half lengthwise, and lightly toast it if desired.
- Spread the spicy mayo on both sides of the baguette.
- Layer the shredded turkey evenly on the bottom half of the baguette. Drizzle with soy sauce and season with salt and pepper to taste.
- Top the turkey with the pickled carrots, daikon radish, cucumber slices, jalapeño, and fresh cilantro.
- Close the sandwich with the top half of the baguette, pressing down gently to compact the filling.
- Slice the sandwich into manageable portions and serve immediately, or wrap it up for a delicious on-the-go meal.
