Turkey Cauliflower Casserole is a delicious low-carb dish that combines ground turkey, cauliflower, and cheese for a hearty meal.

  • 1 pound ground turkey
  • 1 medium head of cauliflower, chopped into florets
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large pot, bring water to a boil and add the cauliflower florets. Cook for 5-7 minutes until tender, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until the onion is translucent.
  4. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with Italian seasoning, salt, and pepper.
  5. Stir in the cooked cauliflower and broccoli florets, mixing well. Add the cream cheese and chicken broth, stirring until the cream cheese is melted and everything is well combined.
  6. Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
