1 pound ground turkey
2 medium sweet potatoes, peeled and diced
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 teaspoon smoked paprika
1 teaspoon cumin
Salt and pepper to taste
2 cups spinach, chopped
Fresh parsley for garnish
Instructions
Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until the onion is translucent.
Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally, until they start to soften.
Push the sweet potatoes to one side of the skillet and add the ground turkey. Cook for 5-7 minutes, breaking it apart with a spatula, until browned and cooked through.
Stir in the chopped bell pepper, smoked paprika, cumin, salt, and pepper. Cook for an additional 3-4 minutes until the bell pepper is tender.
Add the chopped spinach to the skillet and stir until wilted, about 2 minutes. Adjust seasoning if necessary.
Garnish with fresh parsley before serving.
Notes
Feel free to add other vegetables if you like.
This dish can be stored in the refrigerator for up to 3 days.
Can be served with rice or quinoa for a heartier meal.
