2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup water (adjust as needed)
2 tablespoons olive oil
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1/2 onion, finely chopped
1 tablespoon fresh dill, chopped (optional)
Salt and pepper to taste
Extra olive oil for cooking
Instructions
In a large bowl, combine the flour and salt. Gradually add water and olive oil, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
While the dough is resting, heat a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly. Stir in the crumbled feta, dill (if using), and season with salt and pepper.
Divide the rested dough into 4 equal pieces. Roll each piece into a thin circle on a floured surface. Place a generous amount of the spinach and feta mixture on one half of each circle, then fold the other half over to create a half-moon shape. Press the edges to seal.
Heat a non-stick skillet over medium heat and add a little olive oil. Cook each gözleme for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining dough and filling.
Serve warm, cut into wedges, and enjoy!
Notes
Feel free to add other herbs or spices to the filling as per your taste.
Gözleme can be frozen before cooking and cooked directly from frozen.
