Turkish Spinach Gözleme is a delightful and savory pastry filled with spinach and feta cheese, perfect for a quick meal or snack.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup water (adjust as needed)
  • 2 tablespoons olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 onion, finely chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and pepper to taste
  • Extra olive oil for cooking

Instructions

  1. In a large bowl, combine the flour and salt. Gradually add water and olive oil, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  2. While the dough is resting, heat a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly. Stir in the crumbled feta, dill (if using), and season with salt and pepper.
  3. Divide the rested dough into 4 equal pieces. Roll each piece into a thin circle on a floured surface. Place a generous amount of the spinach and feta mixture on one half of each circle, then fold the other half over to create a half-moon shape. Press the edges to seal.
  4. Heat a non-stick skillet over medium heat and add a little olive oil. Cook each gözleme for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining dough and filling.
  5. Serve warm, cut into wedges, and enjoy!

Notes

  • Feel free to add other herbs or spices to the filling as per your taste.
  • Gözleme can be frozen before cooking and cooked directly from frozen.
