  • 4 slices whole grain bread
  • 1/2 cup vegan cheddar cheese
  • 1/2 cup roasted sweet potato cubes
  • 1/2 cup cooked black beans
  • 2 tablespoons vegan butter

Instructions

  1. Roast or reheat sweet potato cubes until tender, if not already cooked.
  2. Evenly distribute vegan cheddar, roasted sweet potato cubes, and black beans between two slices of bread. Top with remaining bread slices.
  3. Spread vegan butter on outer sides of each sandwich. Place sandwiches in a heated pan over medium heat.
  4. Cook each side for 3 to 4 minutes, pressing gently, until bread is golden and filling is hot and cheese is melted.
