2 large sweet potatoes, peeled and cut into 1-inch cubes
4 tablespoons olive oil
Salt and pepper to taste
1 cup goat cheese, crumbled
1⁄2 cup fresh sage leaves, chopped
3 cloves garlic, minced
1 tablespoon balsamic vinegar
1⁄4 teaspoon crushed red pepper flakes (optional)
1⁄4 cup walnuts, chopped (for garnish)
Fresh rosemary for garnish, optional
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the cubed sweet potatoes, 3 tablespoons of olive oil, salt, and pepper. Toss well to ensure that the sweet potatoes are evenly coated.
Spread the seasoned sweet potatoes on the prepared baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until they are golden and tender, stirring halfway through for even cooking.
While the sweet potatoes are roasting, prepare the sage and garlic mixture. In a small skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and chopped fresh sage leaves, sautéing for 2-3 minutes until fragrant and the sage is crispy. Be careful not to burn the garlic.
Once the sweet potatoes are done roasting, remove them from the oven and transfer them to a large bowl. Add the crispy sage and garlic mixture, crumbled goat cheese, balsamic vinegar, and optional crushed red pepper flakes. Gently toss everything together until the sweet potatoes are evenly coated with the flavors.
Taste and adjust seasoning with additional salt, pepper, or balsamic vinegar if desired.
Transfer the mixture to a serving dish and sprinkle with chopped walnuts for added crunch. If desired, garnish with fresh rosemary for a touch of elegance.
