A delightful and comforting dessert combining the flavors of snickerdoodles in a warm cobbler form.

Ingredients

Scale
  • 1/3 cup unsalted butter, melted
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups brown sugar, packed
  • 1 1/2 cups hot water
  • 1/4 cup granulated sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Evenly spread melted butter across the bottom of a 9×13-inch baking pan.
  2. In a large bowl, whisk together milk, vanilla extract, and granulated sugar until smooth.
  3. Add flour, baking powder, salt, and cinnamon, mixing gently until combined without overmixing.
  4. Spoon the batter evenly over the melted butter without stirring.
  5. Generously sprinkle the brown sugar over the batter to create a caramelized filling.
  6. Carefully pour hot water evenly over the batter and sugar mixture. Do not stir.
  7. Bake in the preheated oven for 30–35 minutes, or until the top is golden brown and edges are set.
  8. While the cobbler is still hot, mix granulated sugar and cinnamon for the topping.
  9. Sprinkle the mixture evenly over the cobbler’s surface, allowing it to slightly melt into the crust.
  10. Let the cobbler cool for 10–15 minutes before serving. Serve warm with vanilla ice cream or whipped cream, if desired.

Notes

  • Ensure not to stir after adding the water, as it creates the necessary steam for a moist cobbler.
  • This dish is best served warm.
  • Pair with ice cream for an extra treat!
