  • 5 cups seedless watermelon, cut into 1-inch cubes
  • ½ small red onion, thinly sliced
  • ⅓ cup fresh mint leaves, torn or sliced
  • 150 g feta cheese, crumbled
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lime juice (or lemon juice)
  • ¼ teaspoon sea salt
  • ⅛ teaspoon freshly ground black pepper

Instructions

  1. In a large serving bowl, combine the cubed watermelon, sliced red onion, and mint leaves.
  2. Drizzle with olive oil and lime juice. Sprinkle with salt and black pepper. Gently toss to combine.
