Deliciously soft and fluffy cinnamon rolls filled with a sweet pistachio filling, topped with rich white chocolate ganache and additional pistachios.

¼ cup warm water (105-115℉)
2¼ tsp active dry yeast
¼ cup sugar
¾ cup warm milk
1 large egg
¼ cup unsalted butter, melted
1 tsp salt
3¾ cup all-purpose flour
½ cup unsalted butter, softened (for filling)
¼ cup brown sugar (for filling)
1 tbsp cinnamon (for filling)
¼ cup chopped pistachio (for filling)
170 grams white chocolate, chopped (for topping)
⅕ cup heavy cream (for topping)
½ cup chopped pistachios (for topping)
Instructions
In the bowl of a stand mixer, add the warm water. Sprinkle the yeast and about a teaspoon of the sugar. Let this stand for 5 minutes until thick and foamy.
Add the remaining sugar, the milk, melted butter, egg, and salt. Stir with a wooden spoon, then gradually stir in the flour in three additions.
Attach the dough hook to the mixer. Knead the dough on low speed, gradually increasing to medium-high, for 3-6 minutes until smooth and stretchy.
Shape the dough into a ball, place in a bowl, cover, and let rise for 1 to 1½ hours until doubled in size.
Stir together cinnamon and brown sugar in a small bowl.
Deflate the risen dough and roll it into a 12 x 18 inch rectangle. Spread the softened butter, sprinkle the cinnamon sugar mixture and chopped pistachios on top.
Roll the dough tightly from the long edge and cut into 12 equal portions.
Place in a 9×13 inch baking pan, cover, and let rise for 1 hour.
Preheat the oven to 350℉. Bake for 20-25 minutes or until golden. Cool on a wire rack.
Pour the cooled white chocolate ganache over the cinnamon rolls, topping with additional pistachios.
For the ganache, heat the cream until simmering, pour over chopped white chocolate, cover for 5 minutes, and stir until smooth.
Let the ganache cool until it’s the desired consistency for pouring over the rolls.
Notes
Note 1: Ensure the butter for filling is properly softened for easy spreading.
Note 2: Perform the windowpane test to check if the dough is ready.
