A vibrant and refreshing salsa made with grilled pineapple, fresh herbs, and zesty lime, perfect for elevating any dish or enjoyed on its own.

Ingredients

  • 1 fresh pineapple, peeled and cut into chunks
  • 1/4 cup fresh coriander, chopped
  • 12 fresh chillies, finely chopped
  • 1 lime, juiced
  • Salt to taste
  • Optional: red onion, chopped

Instructions

  1. Preheat the grill to medium heat.
  2. Place the pineapple chunks on the grill and cook for about 3-4 minutes on each side until grill marks appear.
  3. Remove from the grill and allow to cool slightly, then chop into smaller pieces.
  4. In a bowl, combine the grilled pineapple, chopped coriander, fresh chillies, lime juice, and salt. Mix well.
  5. Serve immediately with tacos or tortilla chips, or refrigerate for later use.
