- 2 medium zucchinis, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tablespoon olive oil
- Salt and pepper to taste
- In a large mixing bowl, combine the diced zucchinis, halved cherry tomatoes, chopped red onion, and minced jalapeño.
- Add the chopped cilantro, lime juice, and olive oil to the bowl. Toss everything together until well mixed.
- Season with salt and pepper to taste, adjusting as necessary.
- Let the salsa sit for at least 15 minutes to allow the flavors to meld together.
