A fresh and vibrant salad featuring grilled peaches, creamy mozzarella, and fresh basil, perfect for summer.

Ingredients

  • 2 ripe peaches, halved and pitted
  • 4 cups fresh mozzarella, sliced
  • 4 cups fresh basil leaves
  • 2 cups arugula or mixed greens
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the peach halves with olive oil and season with salt and pepper.
  3. Grill the peaches for about 3-4 minutes on each side.
  4. Combine the mozzarella, basil, and arugula in a large bowl.
  5. Add the grilled peaches on top of the salad.
  6. Drizzle with balsamic glaze and additional olive oil.
  7. Season with salt and pepper to taste.
  8. Serve immediately!
