  • 1 1/2 cups almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup melted butter
  • 1/4 cup sugar
  • 1 cup cream cheese
  • 1 cup sweetened shredded coconut
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup chocolate ganache

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the almond flour, cocoa powder, melted butter, and 1/4 cup sugar in a mixing bowl.
  3. Press the mixture into the bottom of your cheesecake pan to form a crust.
  4. Beat together the cream cheese, 1/2 cup sugar, and vanilla until smooth.
  5. Add the eggs one at a time, mixing in between each addition.
  6. Stir in the shredded coconut gently.
  7. Pour the cheesecake filling over your crust and smooth the top.
  8. Bake for 40-50 minutes until set.
  9. Allow to cool completely before topping with chocolate ganache.

Notes

For best results, allow the cheesecake to cool thoroughly and consider adding chopped almonds on top before serving.
