This Amazing Lentil Meatloaf is packed with flavor and nutrients, offering a hearty yet healthy twist on a classic dish.

Ingredients

  • 1 cup lentils, cooked and drained
  • 1 cup breadcrumbs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 bell pepper, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup ketchup (for glaze)
  • 1 tablespoon maple syrup (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked lentils, breadcrumbs, chopped onion, minced garlic, grated carrot, and chopped bell pepper in a large mixing bowl.
  3. Stir in soy sauce, tomato paste, dried thyme, salt, and pepper until everything is well mixed.
  4. Transfer the mixture into a greased loaf pan and shape it into a loaf.
  5. Mix together the ketchup and maple syrup for the glaze and spread it generously over the top of the lentil loaf.
  6. Bake for 45-50 minutes, or until the loaf is firm and the glaze is bubbling.
  7. Let it cool slightly before slicing and serving.

Notes

Chop your veggies finely for even cooking and consider adding crushed red pepper flakes for spice.
