Deliciously soft and moist muffins with apple and cinnamon, topped with a crunchy streusel for a perfect breakfast or snack.

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup peeled and diced apples
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
  3. Mix the softened butter, eggs, and buttermilk until smooth in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced apples gently.
  6. Mix the brown sugar, oats, and nuts for the streusel topping.
  7. Fill each muffin cup with the batter and sprinkle the streusel topping on each muffin.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Let cool for a few minutes before enjoying.

Notes

For fluffier muffins, let the batter rest for a few before baking.
