A quick and delicious Asian-inspired stir fry with shrimp, cabbage, and colorful veggies, perfect for busy weeknights.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 cups cabbage, chopped
  • 1 bell pepper, sliced
  • 2 carrots, julienned
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add minced garlic and grated ginger; sauté for about 30 seconds.
  3. Toss in the shrimp, cooking until they turn pink, about 2-3 minutes.
  4. Add chopped cabbage, bell pepper, and carrots; stir-fry for 5-7 minutes until tender-crisp.
  5. Pour in soy sauce and rice vinegar, stirring well.
  6. Season with salt and pepper to taste.
  7. Garnish with green onions and sesame seeds before serving.

Notes

Don’t rush the sautéing step to develop flavors. You can substitute shrimp with tofu or chicken for variations.
