4 slices bacon, coarsely chopped
1/2 sweet onion, finely diced
4 (15-ounce) cans pork and beans
1/2 cup Red Gold Ketchup
1/4 cup firmly packed dark brown sugar
1 (20-ounce) can pineapple tidbits in juice, drained
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat the oven to 350°F. In a large oven-safe skillet or dutch oven, cook the bacon over medium-high heat on the cooktop until it just starts to crisp.
Add the onions and cook until they are translucent – about 5 minutes.
Reduce the heat to low and add the pork and beans, ketchup, dark brown sugar, drained pineapple, mustard, apple cider vinegar, salt, and pepper and mix well.
Once combined, place uncovered in the oven and bake for 1 hour. Serve warm.
Notes
For a spicier kick, consider adding jalapeños or hot sauce.
This dish can be made a day in advance and reheated before serving.
