Balsamic Blackberry Grilled Cheese

A delicious twist on the classic grilled cheese featuring sweet blackberries, tangy balsamic vinegar, and creamy brie.

Ingredients

  • 1 1/2 cups blackberries (fresh or frozen)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar or honey
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 pinch salt
  • 2 slices sourdough bread
  • Enough brie cheese to cover one slice

Instructions

  1. Combine ingredients: In a medium saucepan over medium heat, toss in your blackberries, balsamic vinegar, brown sugar or honey, thyme (if you’re using it), and a pinch of salt. Cook until the blackberries start to soften, about 5-7 minutes. Stir often so it doesn’t stick!
  2. Mash and simmer: Gently mash the blackberries with a fork until they’re a lovely pulpy consistency. Let this simmer until it thickens slightly—around 5 minutes more. Remove from heat and let cool a little.
  3. Assemble: Heat a skillet over medium heat. Spread a generous layer of brie cheese on one slice of sourdough, spoon the blackberry balsamic filling on top, and then pop another slice of bread on.
  4. Grill it up: Butter the outside of the sandwich. Grill it in the skillet for about 3-4 minutes on each side, or until golden and crispy. Check it often; you might need an extra minute depending on your stove.
  5. Serve and enjoy: Slice it in half, and watch that gooey brie stretch out!

Notes

For best results, use fresh blackberries and keep your heat consistent while grilling.
