  • 1 cup mashed ripe bananas
  • 1 1/2 cups heavy whipping cream, cold
  • For the Caramel Glaze (Optional):
  • 1/2 cup caramel sauce
  • 2 tablespoons heavy cream
  • Optional Topping:
  • Banana slices
  • Caramel drizzle
  • Whipped cream swirls
  • Crushed toffee or nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Mix in the mashed bananas until combined.
  5. Gradually add the dry ingredients, alternating with buttermilk, mixing until just combined.
  6. Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  7. For the mousse, beat cream cheese and powdered sugar until smooth. Add mashed bananas and caramel sauce, mixing until creamy.
  8. In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold into the banana caramel mixture until light and airy.
  9. Spread the mousse evenly over the cooled banana cake base. Smooth the top with a spatula.
  10. If using caramel glaze, gently warm caramel sauce with heavy cream and pour over the mousse layer, allowing it to set.
  11. Refrigerate for at least 4 hours, or until fully firm.
  12. Decorate with banana slices, whipped cream swirls, caramel drizzle, or crushed toffee before serving.
