1 cup graham cracker crumbs
3 tablespoons sugar
4 tablespoons melted butter
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
1/4 cup berry jam (strawberry, raspberry, or blueberry)
1 tablespoon water
Instructions
Preheat oven to 325°F (163°C). Line a mini muffin pan with paper liners.
In a small bowl, combine graham cracker crumbs, 3 tablespoons sugar, and melted butter. Press about a teaspoon of the mixture into the bottom of each liner.
In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, beating after each addition. Mix in vanilla and sour cream until just combined.
Spoon the cheesecake batter over the crusts, filling each liner almost to the top.
In a small bowl, stir the berry jam and water together to thin it slightly. Drop small dots of jam on top of each cheesecake and swirl gently with a toothpick.
Bake for 15–18 minutes, or until centers are set. Cool completely, then refrigerate for at least 2 hours before serving.
Notes
Make sure the cream cheese is softened for easier mixing.
Chilling the bites for at least 2 hours will enhance their flavor and texture.
Feel free to use your favorite berry jam or a combination of jams!
