  • 1/4 cup all-purpose flour
  • 1/3 cup cornstarch
  • 1/2 tbsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tbsp hot sauce
  • 1 large egg
  • 3/4 cup buttermilk
  • 1 1/2 cups Panko breadcrumbs
  • Cooking oil spray (to help browning)
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1/2 tbsp honey
  • 1/2 tsp lime juice
  • 1 tbsp fresh parsley, chopped
  • 1 green onion, thinly sliced

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper or foil. Pat the shrimp dry with paper towels.
  2. In a small bowl, whisk together the mayonnaise, sweet chili sauce, honey, and lime juice until smooth. Set the sauce aside.
  3. In one bowl, combine flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, whisk the egg, buttermilk, and hot sauce until smooth.
  4. Dip each shrimp into the wet mixture, then dredge in the dry mixture. Transfer to a shallow bowl with Panko breadcrumbs and press to adhere.
  5. Arrange the breaded shrimp on the baking sheet, spray lightly with cooking oil spray, and bake for 10 minutes.
  6. Flip each shrimp and bake for another 5–10 minutes until golden brown and cooked through.
  7. Let the shrimp cool for 1–2 minutes on the baking sheet. Transfer to a serving platter, drizzle with sauce, and garnish with parsley and green onion.
