A creamy and hearty potato soup perfect for chilly days, customizable with additional ingredients like bacon or cheese.

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Sauté the diced onion and minced garlic in a bit of oil until soft, about 5 minutes over medium heat.
  2. Add the diced potatoes and pour over the broth, bringing everything to a boil (about 5-7 minutes).
  3. Simmer for 15-20 minutes, until the potatoes are fork-tender.
  4. Blend the soup until smooth with an immersion blender or in a regular blender (be cautious with hot liquids).
  5. Add the heavy cream and season with salt and pepper to taste.
  6. Serve hot, garnished with chives or green onions.

Notes

Let the soup sit for a few hours for better flavor. It’s safe to freeze without the cream.
