Birria Tacos

Delicious Birria Tacos made with tender beef, rich spices, and served with a warm dipping consomé.

Ingredients

  • 2 lbs beef chuck roast
  • 4 cups beef broth
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Soak the dried guajillo and ancho chilies in hot water for about 15 minutes until soft.
  2. Blend the soaked chilies with garlic, onion, spices, and 1 cup of beef broth until smooth.
  3. Season the beef chuck roast with salt and pepper, then place it in a slow cooker or Dutch oven.
  4. Pour the chili sauce and remaining beef broth over the beef.
  5. Slow cook on low for 6-8 hours until the beef is tender.
  6. Shred the beef with forks and mix it back into the consomé.
  7. Heat corn tortillas in a skillet, then fill them with the beef mixture.
  8. Garnish with fresh cilantro and serve with lime wedges.

Notes

Let the beef sit in the consomé before serving to enhance the flavors.
