Sweet and fun buttercream bunny cookies perfect for Easter or any whimsical get-together.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • Buttercream frosting (store-bought or homemade)
  • Food coloring (various colors)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line the baking sheets with parchment paper.
  2. Mix together the flour, baking soda, and baking powder in a bowl. Set aside.
  3. Cream the softened butter and sugar together until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well mixed.
  5. Blend in the dry ingredients gradually, being careful not to overmix.
  6. Roll out the dough to about 1/4 inch thickness on a lightly floured surface and cut out bunny shapes.
  7. Place the bunny cookies on the prepared baking sheets and bake for 8-10 minutes.
  8. Let the cookies cool completely on a wire rack before decorating.
  9. Decorate the cookies with buttercream frosting and desired food colors. Add sprinkles if desired.

Notes

Chill the dough for about 15 minutes if it’s too warm before rolling out. Keep an eye on the bake time to prevent overbaking.
