Deliciously soft and chewy cookies filled with the warm flavors of brown sugar and cinnamon.

  • 1 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Beat the softened butter, brown sugar, and granulated sugar until creamy and fluffy.
  3. Add the egg and vanilla extract, and mix until smooth.
  4. Whisk together the flour, ground cinnamon, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients to the butter mixture and mix just until a soft dough forms.
  6. Chill the dough in the refrigerator for 20 to 30 minutes.
  7. Stir together the coating sugar and ground cinnamon.
  8. Scoop the dough into balls and roll each one in the cinnamon sugar mixture.
  9. Place the dough balls on the prepared baking sheets.
  10. Bake for 9 to 11 minutes until edges are lightly set.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For best results, ensure your butter is softened and chill the dough before baking.
