A creamy, cheesy pasta dish enveloping tender chicken with Cajun flavors, perfect for weeknight dinners or gatherings.

  • 8 oz pasta (penne or rigatoni)
  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth
  • 1 tablespoon Cajun seasoning
  • 1/2 cup diced tomatoes
  • 1/4 cup green onions, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. Heat olive oil over medium heat in a large skillet and add the shredded chicken. Stir in Cajun seasoning and sauté for 2-3 minutes.
  4. Introduce cream cheese and chicken broth to the skillet, stirring until the mixture is smooth and creamy.
  5. Mix in the cooked pasta, diced tomatoes, half of the cheddar cheese, and season with salt and pepper to taste.
  6. Transfer the mixture into a baking dish and sprinkle the remaining cheddar cheese on top.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
  8. Garnish with fresh green onions and serve hot.

Notes

Try using leftover rotisserie chicken for flavor and convenience. Adjust Cajun seasoning based on spice preference.
