A delicious and flavorful Cajun Potato Salad that combines red potatoes, hard-boiled eggs, and a zesty dressing, perfect for any gathering.

Ingredients

  • 3 lbs red potatoes, cut in bite-sized pieces
  • 34 celery stalks, chopped
  • 6 hard-boiled eggs, chopped
  • 2 green onions, sliced
  • 1½ tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 1/3 c mayo
  • 1/3 c sour cream
  • 1 T apple cider vinegar
  • 2 T Dijon mustard
  • 1/2 tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Add the potatoes to a pot and cover them with water. Once the water begins to boil, add up to 1 teaspoon of salt. Boil the potatoes for about 12-15 minutes until soft enough to pierce with a fork but firm enough to hold their shape.
  2. After draining, allow the potatoes to cool slightly. In a separate bowl, whisk together all of the dressing ingredients and adjust seasoning to taste.
  3. When the potatoes are cool enough to handle, add them to a large bowl along with the chopped eggs, celery, and green onions. Gently toss with about two-thirds of the Cajun dressing.
  4. Chill the potato salad for at least 30 minutes to allow the flavors to blend nicely.
  5. Before serving, toss with the remaining dressing and garnish with chopped parsley and a sprinkle of paprika if desired.
  6. Store leftovers in an airtight container for up to 5 days.

Notes

  • Use smoked paprika for added flavor.
  • Adjust the cayenne pepper according to your spice preference.
  • Ensure potatoes are cool enough to prevent the dressing from becoming runny.
