A hearty and comforting dish combining tender steak tips and rigatoni in a creamy Cajun spiced cheese sauce.

  • 2 cups rigatoni pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella or Fontina cheese (optional)
  • 1/4 cup extra Parmesan cheese for garnish

Instructions

  1. Boil the Pasta: Start by bringing a pot of salted water to a boil. Add the rigatoni and cook until al dente. Don’t forget to stir often so it doesn’t stick! Once done, drain it and set it aside.
  2. Sear the Steak: In a skillet, heat the olive oil and 1 tablespoon of butter. Season the steak tips generously with Cajun seasoning, salt, and black pepper. Sear the steak for about 2-3 minutes on each side until you see that lovely brown crust. That’s the flavor! Remove the steak from the pan and set it aside.
  3. Make the Sauce: In the same skillet, melt the remaining butter. Add the minced garlic and sauté for about 30 seconds to let that aroma bloom. Pour in the heavy cream and bring it to a gentle simmer. Mix in the Parmesan cheese and the optional mozzarella or Fontina. Stir until smooth and creamy.
  4. Combine Everything: Add the cooked rigatoni and seared steak tips into the cheesy sauce. Toss everything together until the pasta is evenly coated and the steak tips are warmed through. It thickens more as it cools, so don’t rush this step.

Notes

For best results, use freshly grated Parmesan. Adjust spices to taste.
