In a large zip top plastic bag, add the steak, taco seasoning, lime juice, and olive oil. Seal the bag, squish the contents around, and marinate in the fridge for at least 30 minutes, up to 8 hours.
Preheat outdoor grill to medium high (alternatively, use an indoor grill pan or cast iron skillet to cook the steak).
Add the steak to the grill and cook for about 3 to 4 minutes per side, or until done to your liking.
Allow meat to rest for 5 to 10 minutes before slicing into thin strips.
Divide the beef among tortillas as desired.
To make the salsa, combine cilantro, jalapeños, olive oil, and enough lime juice in a blender. Process on high speed until smooth.
Taste the salsa and add a pinch of salt or sugar for flavor balance if desired.
Add blender salsa, optional prepared salsas, pico de gallo, and other toppings to the tacos and serve immediately.
Notes
Marinating the steak for a longer time will enhance its flavor.
