Delightful Carrot Cake Bars that strike a perfect balance between moist and fluffy, topped with a creamy cream cheese frosting.

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the eggs and mix in the vegetable oil and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients. Stir until just combined. Fold in the grated carrots and nuts if using.
  5. Pour the batter into your prepared baking pan and smooth the top.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Let cool completely in the pan.
  8. For the frosting, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and mix until combined. Mix in vanilla.
  9. Spread the frosting over the cooled bars and top with chopped nuts if desired.
  10. Cut into bars and serve.

Notes

Grate your carrots finely for better texture. Do not skip the cooling step to ensure frosting stays firm.
