A moist, rich, and irresistibly chocolatey cake that’s easy to make and perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your two 9-inch round cake pans.
  2. Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Mix on medium speed for about 2 minutes until well blended.
  4. Carefully stir in the boiling water. The batter will look thin.
  5. Pour the batter evenly into your prepared pans.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool the cakes in the pans for about 10 minutes, then remove and let them cool completely on a wire rack.
  8. Frost with your favorite icing before serving.

Notes

The cake gets even better the next day. Store leftovers in an airtight container.
