Cherry Amaretto Tiramisu

A delicious twist on the classic Italian tiramisu, featuring juicy cherries and Amaretto liqueur.

Ingredients

  • 4 cups pitted and halved fresh red cherries (about 22 ounces)
  • 1/3 cup water
  • 1/2 cup granulated sugar
  • 2 teaspoons lemon juice
  • 24 tablespoons Amaretto liqueur
  • 1 ½ cup heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup granulated sugar
  • 2/3 cup cherry syrup
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 (7 oz) package Savoiardi ladyfingers (about 24)

Instructions

  1. Combine your chopped cherries, water, sugar, and lemon juice in a medium saucepan.
  2. Cook over medium heat, stirring often to avoid sticking, until the mixture thickens (about 10-15 minutes).
  3. Let it cool, then stir in Amaretto to taste.
  4. In a large bowl, whip the heavy cream until stiff peaks form.
  5. Beat mascarpone cheese, sugar, cherry syrup, vanilla, and almond extract until smooth.
  6. Gently fold in the whipped cream.
  7. Dip each ladyfinger briefly in the cherry syrup.
  8. Layer half of the ladyfingers in the bottom of your dish.
  9. Spread half of the mascarpone filling over the ladyfingers.
  10. Repeat with the remaining ladyfingers and filling.
  11. Cover and chill for at least 240 minutes or overnight.

Notes

For best results, use fresh cherries and do not skip the chilling step for an incredible creamy texture.
