Delightful Cherry Cobbler Muffins that bring the sweet taste of summer to your breakfast table.

Ingredients

  • 1 cup fresh cherries, pitted and chopped
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl until well combined.
  3. Whisk together the melted butter, milk, eggs, and vanilla in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined — a few lumps are okay.
  5. Fold in the chopped cherries gently.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving.

Notes

For best results, let muffins cool a few minutes before serving; they freeze beautifully and can be reheated.
