These Chewy Oatmeal Chocolate Chip Cookies are the ultimate comfort food, featuring rich chocolate, hearty oats, and a soft, chewy texture.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup chopped walnuts or pecans, optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, cinnamon, salt, and oats in a medium bowl.
  3. Beat the softened butter, brown sugar, and granulated sugar in a large bowl until creamy.
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the chocolate chips and optional nuts.
  7. Scoop the dough onto the prepared baking sheets, leaving space between each cookie.
  8. Bake for 10 to 12 minutes until edges are golden and centers look soft.
  9. Let cool on the baking sheet for about 5 minutes, then transfer to a wire rack.

Notes

For thicker cookies, chill the dough in the fridge for about 30 minutes before baking. Use old-fashioned rolled oats for the best chewy texture.
