  • 1 pound chicken apple sausage
  • 8 ounces pasta (penne or farfalle)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 cups spinach (fresh)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (mozzarella or parmesan)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the chopped onion and sliced bell pepper until softened, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Brown the sliced chicken apple sausage in the pan for about 5-7 minutes.
  5. Pour in the chicken broth and bring to a gentle simmer.
  6. Add the pasta and cook according to package instructions.
  7. Reduce heat, then add heavy cream and cheese, stirring until melted.
  8. Add the spinach and cook until wilted.
  9. Season with salt and pepper to taste.
