2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
1 head romaine lettuce, chopped
1/2 cup Caesar dressing
1/4 cup grated Parmesan cheese
1 cup croutons
1 tablespoon fresh lemon juice
Fresh parsley, chopped (for garnish)
Instructions
Preheat grill or grill pan over medium-high heat.
Brush the chicken breasts with olive oil and season with salt and pepper.
Grill the chicken for 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from grill and let rest for a few minutes before slicing.
In a large bowl, combine the chopped romaine lettuce and Caesar dressing. Toss until the lettuce is evenly coated.
Add the sliced grilled chicken on top of the dressed lettuce.
Sprinkle with grated Parmesan cheese and croutons. Drizzle with fresh lemon juice for added flavor.
Garnish with chopped parsley before serving.
Notes
Can substitute grilled chicken with rotisserie chicken for quicker preparation.
For a lower calorie option, use light Caesar dressing.
