A comforting Chicken in a Creamy Parmesan and Sundried Tomato Sauce that’s easy to prepare and full of flavor.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sundried tomatoes, chopped
  • 1 teaspoon dried Italian herbs
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the seasoned chicken and cook for about 5-7 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. In the same pan, add the minced garlic and sauté for about 30 seconds.
  6. Pour in the heavy cream and whisk with the garlic, letting it simmer for a minute.
  7. Add the grated Parmesan cheese and stir until melted.
  8. Toss in the sundried tomatoes and the Italian herbs, stirring until the sauce thickens.
  9. Return the chicken to the skillet and simmer for another 2 minutes.

Notes

Ensure chicken is pounded to an even thickness for quicker cooking. Optional: Add red pepper flakes for heat.
