A quick and delightful dish featuring creamy avocados filled with a zesty chicken salad.

Ingredients

  • 2 ripe avocados
  • 2 cups cooked chicken, shredded
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Slice the avocados: Cut the avocados in half and remove the pit. Scoop out a little bit of the flesh to create more space for the salad.
  2. Mix the chicken salad: In a medium bowl, combine the shredded chicken, mayonnaise, Dijon mustard, celery, red onion, lemon juice, and salt and pepper. Mix it well.
  3. Stuff the avocados: Spoon the chicken salad mixture generously into each avocado half.
  4. Garnish: Sprinkle fresh herbs on top if desired.
  5. Serve immediately: Enjoy the stuffed avocados right away, or chill if necessary.
