A refreshing and flavorful salad combining grilled chicken, fresh vegetables, and a delicious Asian-style dressing.

  • 3 Tablespoons rice vinegar
  • 2 Tablespoons hoisin sauce
  • 2 Tablespoons soy sauce
  • 1 Tablespoon honey
  • 1 Tablespoon ginger paste
  • 2 cloves garlic minced
  • 1/4 cup olive oil
  • 1 tablespoon sesame oil
  • For the Salad:
  • 4 cups Napa cabbage shredded
  • 4 cups iceberg lettuce chopped
  • 1 cup carrots shredded
  • 2 cups grilled chicken breast sliced or cubed
  • 11 ounces mandarin oranges drained
  • 4 green onions sliced
  • 1/2 cup slivered almonds
  • 2 tablespoons toasted sesame seeds
  • 1 cup chow mein noodles

Instructions

  1. In a bowl, whisk together the rice vinegar, hoisin sauce, soy sauce, honey, ginger paste, and minced garlic.
  2. Gradually add the olive oil and sesame oil to the dressing, whisking until combined.
  3. In a large salad bowl, combine the Napa cabbage, iceberg lettuce, and shredded carrots.
  4. Add the grilled chicken, mandarin oranges, green onions, slivered almonds, and toasted sesame seeds to the salad bowl.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Top the salad with chow mein noodles just before serving for added crunch.
