Delicious Cinnamon Roll Cookies that combine the comforting flavors of cinnamon rolls in a chewy cookie form, topped with a sweet glaze.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup icing sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  9. For the glaze, mix the icing sugar and milk until smooth and drizzle over the cooled cookies.

Notes

For extra flavor, you can add chopped nuts or chocolate chips. Ensure you let the cookies cool before glazing.
