A delightful twist on traditional French toast, these muffins are perfect for breakfast, brunch, or a sweet snack.

  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (plus more for topping)
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons cinnamon sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin.
  2. Combine the flour, sugar, baking powder, salt, and ground cinnamon in a mixing bowl. Stir well to mix everything evenly.
  3. Whisk together the milk, melted butter, egg, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Sprinkle the tops with cinnamon sugar.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow the muffins to cool slightly before serving.

Notes

For best results, let the muffins cool slightly before removing them from the tin. Adjust baking time based on your oven.
