A delightful and fluffy lemon salad that combines a zesty lemon flavor with a light, airy texture, perfect for summer gatherings.

  • 1 package lemon gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup mini marshmallows
  • 1 cup whipped topping
  • 1/2 cup chopped pecans (optional)
  • 1/4 cup lemon juice

Instructions

  1. Dissolve the gelatin: In a mixing bowl, combine the lemon gelatin with 1 cup of boiling water. Stir until it’s fully dissolved.
  2. Add the cold water and lemon juice: Once the gelatin has dissolved, mix in 1 cup of cold water and the lemon juice. Refrigerate until slightly thickened (about 30 minutes).
  3. Fold in the goodies: Carefully fold in the drained crushed pineapple, mini marshmallows, whipped topping, and optional pecans.
  4. Pour and chill: Transfer the mixture into your serving dish and refrigerate until completely set (about 2 hours).
  5. Serve chilled: Enjoy at gatherings or potlucks.
