A warm and comforting coconut chicken rice bowl that’s quick and easy to make, perfect for busy weeknights.

Ingredients

  • 1 cup jasmine rice
  • 1 can coconut milk
  • 1 lb diced chicken breasts
  • 1 tablespoon ginger (minced)
  • 2 cups chicken broth or water
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Heat a little oil in a large pot over medium heat. Add the diced chicken breasts and cook until browned, about 5-7 minutes.
  2. Stir in the minced ginger and cook for an additional minute.
  3. Add the jasmine rice, coconut milk, and chicken broth (or water) to the pot.
  4. Season with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and garnish with chopped cilantro, if desired.
  7. Serve hot and enjoy your Coconut Chicken Rice Bowl!

Notes

Rice thickens more as it cools; don’t panic if it seems a bit soupy at first. Consider adding vegetables or spices to customize.
